From Wikipedia, the free encyclopedia.

Artocarpus heterophyllus Lam. it is a tropical plant of the Moraceae family native to India [1 ] . It is cultivated for its fruit , the largest existing in nature among those that grow from trees [2] ; in Italian the fruit is called giaca , derived from Portuguese jaca , but the English name is also widespread commercially jackfruit in imported canned products. However, the fruit is still little known and for this reason it does not yet have a consolidated vernacular name recognized by the Accademia della Crusca .

Description

The tree has a sturdy trunk that grows up to 20 m tall and 60cm in diameter.[ without source ]

The leaves are perennial.

It's a plant cauliflora (i.e. which bears fruit directly on the trunk) e monoecious that is, with unisexual flowers on the same plant. The male and female flowers are united in inflorescences also unisexual.

The fruit is oval in shape and originates from the development of the female inflorescence; can overcome the 40cm in diameter ei 30kg of weight. It is a large false compound fruit in which the individual fruits derive from the ovary of the inflorescence flowers and each surround a seed, which is also edible. The color of the ripe peel is dark yellow, that of the pulp is generally deep yellow, but also orange.

Cultivation

The fruit tree is cultivated in various tropical countries of South America and Africa and Asia . It has also proven resistant to various subtropical microclimates, such as the south of Florida , where temperatures never drop below −1 °C . However, despite surviving, already at temperatures a few degrees above zero Celsius there is damage to the organoleptic qualities of the fruit, so its cultivation as fruit is not possible even in the most sheltered areas of the Mediterranean basin , where the once adult tree could survive in the open air, but where fruit production would be irrelevant.

Food uses

The fruits are eaten fresh or boxed for export, dehydrated or fried in the form of chips .
In some countries the juice is fermented to obtain a alcoholic beverage . Underripe fruits, on the other hand, can be reduced to Flour for various exotic specialties, or even cooked like the fruits of the congener breadfruit ( Artocarpus altilis ). The large seeds are also used to be cooked in a similar way to chestnuts .
The flavor is a mixture of apple And pineapple , with an aftertaste of vanilla , delicious in the best varieties; when cooked for over an hour it takes on a taste similar to that of pork . [3]
