The okra ( Abelmoschus esculentus ( L. ) Moench ), also spelled gombeau or gombault , is one plant from the family from the Malvaceae [1] native to Africa tropical and cultivated in hot countries. It is also known as bamia or bammia (from the name used in Ethiopia , Egypt and other Arab countries; in Arabic بامية ‎ ? , bāmiya ), ocher , okra od okro , or gnaouia (from the name used in Tunisia ; ڤناوية ). In Portuguese-speaking countries it is known by the name of quiabo .

Cultivation

It is cultivated both in areas tropical than in areas subtropical , and in particular in Asia (especially central and western) and in Asia Minor ; it provides fruits which are consumed in Africa but also in India , while its root is rich in mucilage it is used as an emollient to replace marshmallow [ citation needed ] .

It is also cultivated in Eastern European countries and in Italy , where 90% of the cultivated area is recorded Sicily [2] .

The stems of okra and many mallows are macerated and processed to provide a textile fiber known as okra fiber .

Kitchen

Okra fruit is widely used in Indian cuisine , Tunisian cuisine and in the Cajun cuisine . It is also present in the Egyptian cuisine ( bāmia ), Moroccan cuisine ("ملخيا"-"mlukhia"), Persian cuisine ( Iranian cuisine ) ( bāmiye ), in Bulgarian cuisine (бамя), Greek ( bamies ), Lebanese cuisine ( bemiye ), Bosnian ( bamije ), in that Albanian ( bamje ), in the Brazilian cuisine ( quiabo ), in the Turkish ( bamya ), in Kurdish cuisine, in Japanese cuisine , in Senegalese cuisine ( kandia ), in Filipino cuisine , at that Romanian ( bame ) and from Ghana and sub-Saharan Africa in general, where it is used to prepare a "sauce" called Okra soup or Okra Sauce. It is also present in the Caribbean cuisine like for example in that one Cuban ( quimbombò ).

In the southern United States of America, okra is well known by the name of okra and is particularly appreciated breaded and fried in small pieces, so much so that the recipe is known as fried okra it is considered a symbol of the cuisine of the southern states of the union.
